Thai Jungle Curry Paste

This curry paste has taken a long time to make it onto the website. Mainly because I have never been convinced that enough people enjoy eating a curry this spicy. Judging by the amount of requests I get, I was wrong, so here it is. Of course a curry paste shouldn't be just about heat and there is a lot else going on here, it's not a toned down version for Western palates so it's also strong on the shrimp paste as well. Definitely not everyone's cup of tea, or pot of curry, this should be cooked without coconut milk. Also recommended to follow the directions for cooking carefully as this paste has to be cooked by adding it to water and cooking, instead of being heated directly which would induce sneezing attacks or worse!
Dried Red Bird's Eye Chillies (17%), Shallots , Sunflower Oil, Thai Fish Sauce (Fish), Lemon Grass , Krachai (9%) Garlic, Shrimp Paste (Crustaceans), Galangal, Coconut Palm Sugar, Kaffir Lime Leaves, Coriander (3%) , Salt, Thai Basil.

Wow

Yet again another truly fantastic paste. It is HOT but still so aromatic and full of flavour. Will definitely be keeping one of these in the cupboard should we ever need to sweat out a cold lol. Seriously though, if you live life on the spicier side you’ll love it.

Thai heat

I've always considered 'Thai hot' to be far more palatable than 'Indian hot'. The Jungle Curry is no exception, must be the bird's eye chillies used, and although this is characteristically lip-numbing it's also just as lip-smackingly tasty as all the other pastes in range. Just have a glass of milk handy...
I used steak, thinly sliced, and the vegetables were: courgette instead of aubergine as I didn't have one; beef stock; sliced green pepper; bamboo shoots & fresh bean sprouts. Served with sticky rice and topped with Thai basil and crispy-fried shallot rings.
It's certainly fiery, and after initial tasting I succumbed to adding a small tin of Waitrose coconut cream, which calmed it a little. I also adjusted the saltiness/sweetness to my taste with fish sauce & palm sugar.
All-in-all another excellent paste but, as said, definitely not for the faint-hearted!

Found this lady’s pastes on Facebook and being a thai food lover I thought I’d give it a go but wasn’t expecting too much as these things are never the same as restaurant standard are they? Well how wrong I was, the sauce is absolutely gorgeous and better than any restaurant sauce I’ve tried. Very impressed. I still have the jungle curry to try but I’ll definitely be going through all the back catalogue of sauces now - highly recommend.

Spicy !!

The description said it was spicy and it didn't lie. Spicy but extremely tasty. I've had " Jungle Curry" in Thai Restaurants but not a patch on this

This paste was milder and more sweet compared to the red and green curry pastes but very tasty. I would definitely purchase again. The use of potatoes made a change.

Absolutely delicious!

Oh my goodness - I can't overstate how delicious this was. I made a pork version from a tenderloin and it was fragrant and had such a depth of flavour without blowing our heads off. It was my daughter's introduction to Thai curries and she is a complete convert. Thank you!
